I have caught the flu and I am working from home. I am trying to get well as fast as I can. Drinking water and hot tee with lemon and ginger. Eating nuts and banana. Someone told me that was a good thing ones, don’t know if it is true. but I am thinking it cant hurt.
What to eat when your sick. Something that you can resist and something that is good for you: banana / egg pancakes with coconut and cacao powder:
1 tablespoon cacao powder
1 tablespoon coconut
2 tablespoons of oatmeal blended to flour. (you can also use flour)
1 teaspoon on baking powder
Moss the bananas with a fork and mix together with the eggs. Put all of the dry ingredients in and mix together with the fork. The mix is put on a pan in small pancakes portions and baked on low heat. Top of with blackberry comport, coconut and dried cranberries.
You can always ad different flavours instead of coconut. Could be vanilla, cinnamon or cardamon...your imagination set the limit!
Fall has arrived in Danmark / Copenhagen so I have wrapped my self in a warm knit from Munthe's A/W collection 2014 in a lovely burned lipstick red. Underneath I am wearing a very old ( al most vintage Baum and Pferdgarten skirt dress in a lovely flower pattern in fall colours. Black stockings and man style lacquer shoes.
To start my day I love making this mix of lovely things:
7 frozen strawberries
10 frozen blueberries
1/2 frozen banana
200 ml of yogurt
Mix it all together in a blender or hand blender. Take a big glass, and pour the half of the blended mix into it. Take 4 tablespoon of oatmeal and 1 tablespoon of linseeds and put it in the glas in top of the blended mix. Pour the rest of the blended mix in. Top with of with fresh fig and fresh mint.
